The menu
The chef skilfully blends regional traditions from Sicily, Veneto, Tuscany and beyond. He revisits classics such as Linguine alle vongole or Vitello tonato, bringing them subtlety and lightness. He draws his inspiration from the cuisine of his childhood as well as from the peasant dishes to which he gives a new flavour. And then, depending on the season, he imagines original recipes that wonderfully express the spirit of this cheerful and energetic Italian cuisine that we love so much.
